Here’s a simple, quick, and delicious recipe for Spinach Pasta —perfect for a light flavorful meal.

This nutritious dish is a great option for those looking to add a boost of vitamins and minerals, such as iron, calcium, and vitamins A and C. The taste of spinach blends seamlessly with other ingredients, making it a versatile and healthy choice for weeknight dinners or special occasions. It pairs well with all types of pasta, including spaghetti, penne, or fettuccine.

Total Time: 25 minutes

Ingredients:

  • 300g pasta (spaghetti, linguine, penne, or your choice)
  • 3 tbsp olive oil
  • 4 cloves garlic, chopped
  • 1 small shallot finely chopped
  • 200g fresh, washed, spinach, chopped
  • 20g fresh cauliflower, chopped small
  • 1/2 tsp red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt and black pepper to taste
  • 2 tbsp butter (optional for extra richness) 

Instructions:

  1. Prepare the garlic, spinach and cauliflower:
In a large skillet, heat the olive oil over medium heat.

Add the sliced garlic and chopped shallot. Sauté until fragrant and lightly golden (about 1-2 minutes). Be careful not to burn it.

Add the cauliflower

Cover for 5 minutes

Add the red pepper flakes (if using) and stir briefly.
  1. Cook the pasta:
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  1. Add the spinach:
Add the fresh, washed spinach to the skillet. Stir occasionally until it wilts down, about 2-3 minutes.

Season with salt and black pepper to taste.
  1. Combine pasta and spinach:
Place pasta in a bowl, place a ladle of spinach and garlic in the center or

Toss the cooked pasta into the skillet with the spinach and garlic mixture. If it seems dry, add a splash of the reserved pasta water to create a light sauce.
  1. Finishing touches:
Taste and adjust seasoning as needed.

Serve: Divide the pasta among plates, and garnish with a haystack of Parmesan and a few small fresh spinach leaves.  Buon appetito!
