Ingredients- 2 cups fresh pineapple chunks (plus more for garnish, if desired)
- 8 small sprigs fresh rosemary (plus 8 more for garnish)
- 2 (12 oz) cans or bottles of ginger beer, chilled
- Crushed ice
- Muddle Ingredients: For each mocktail, place 2 chunks of pineapple and one small sprig of rosemary in the bottom of a cocktail glass. Use a muddler or the back of a spoon to gently crush the pineapple and rosemary together until juicy and fragrant. Remove the stem of the muddled rosemary sprig.
- Add Ice and Ginger Beer: Fill the glass with crushed ice. Pour about ⅓ cup of chilled ginger beer over the ice, allowing it to bubble and infuse with the flavors. Mix.
- Garnish and Serve: Garnish each glass with a fresh rosemary sprig and a pineapple chunk on the rim for a touch of elegance. Serve immediately and enjoy the crisp, revitalizing taste!
- For a hint of extra citrusy zing, add a splash of fresh lime juice to each glass.
