Ingredients:
- 300g pasta (spaghetti, linguine, penne, or your choice)
- 3 tbsp olive oil
- 4 cloves garlic, chopped
- 1 small shallot finely chopped
- 200g fresh, washed, spinach, chopped
- 20g fresh cauliflower, chopped small
- 1/2 tsp red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese (optional)
- Salt and black pepper to taste
- 2 tbsp butter (optional for extra richness)
